HACCP is the foundation of food safety and this qualification enables those responsible for the development and maintenance of quality systems to demonstrate that they have received adequate training in the application of the HACCP principles. This practical course uses group activities to cover the 12 Codex steps to HACCP that contribute to safe food production. Delegates will learn to identify hazards and develop controls for pre requisites and critical control points. The essential process of monitoring, documenting and reviewing significant hazards and managing corrective actions and root causes are incorporated into this three day course.
