If you want to eat less meat or make it go further or are trying to reduce your shopping bill, this class is a good place to start. The programme covers advice on how to buy meat and where it fits into a good diet, the key home-cook butchery skills, all cooking methods and will give you some lovely bits to take home. You will learn to make:

5 meals out of one chicken: 

  • a chicken liver paté 
  • chicken breasts stuffed with mascarpone, lemon & rosemary
  • chicken thighs wrapped in bacon
  • spicy chicken wings
  • chicken broth 

Lambs liver, Venetian-style
